  As far as the foundation of the Coptic Church, you can find plenty of information at our sister site CopticChurch.net @ Introduction to the Coptic Church Section
  
  Unfortunately, there is a lack of Coptic Art articles on the internet. We'll do our best to add more information on Coptic Art. But for now here is an article on Coptic Art:

  There are some books that you can purchase from Amazon.com. Some titles are:
  
  "The art of the Copts" by Pierre Du Bourguet
  
  "Coptic Art and Archaeology : The Art of the Christian Egyptians" by Alexander Badaway
  
  "Christian Egypt: Coptic Art and Monuments Through Two Millennia" by Massimo Capuani
  
  "Coptic Monasteries: Egypt's Monastic Art and Architecture" by Gawdat Gabra Abdel Sayed, et al
  
  I hope that these names would be helpful to you. I will let you know if I find more info. about Coptic Art.
