A quick Google search suggests that is a quote from Matthew Henry, a 17/18th century English Presbyterian minister, and not a Coptic (or indeed Orthodox) Father at all.

Hmm, do our coptic Calendars usually quote non-Coptic fathers? That is where I got the quote from.
