I want to begin reading the Church Fathers and so I was wondering if someone could provide a list of the major writings of St. Cyril of Alexandria.

There are many patristics texts here. It's an Eastern Orthodox site though, and there are writings from some heretics on there, so just be careful who you are reading. There are plenty of commentaries and writings from St. Cyril though, and many other Orthodox Fathers like St. Athanasius and St. Severus. Just use the search tool  :)
