You could perhaps look at the development of the Coptic language and the transition from the use of Greek in the Church to Coptic, and then to the decline of Coptic and the use of Arabic, and then consider the continuing use of Coptic in liturgical settings and the efforts to revive it as a properly living language. (that more than only a handful use).
You could consider great figures such as St Shenoute who wrote extensively in Coptic, and ask why Coptic replaced Greek, and why Arabic replaced Coptic. You could consider which religious texts first began to appear in Coptic and why? Who was using Coptic while the Church authorities tended to use Greek? Why Greek died out? How long it took for Coptic to be universally established as the language of the Church, and how long it took for Arabic to become generally dominant. Again, considering which Coptic texts have remained Coptic despite the pressure of Arabic, and which texts first were changed to Arabic.
